Wine Tourism: Tivoli Palácio De Seteais opens its Colares Room

Tivoli Palácio de Seteais, the five-star boutique hotel located in an 18th-century palace in the city of Sintra, has just opened its Colares room, an elegant, original and exclusive space to indulge in the best local wines and gourmet Portuguese dishes.

The hotel invites guests to indulge in a wine lovers experience and discover the most region’s most charismatic vintages. The star is Colares wine, one of Portugal’s more distinctive, select wines produced in Sintra’s neighbouring wine region Colares. Thanks to a unique and complex planting and ageing process, the wine reveals a smooth complexity and a rich, calm and authentic flavour. Its acidity, taste and body are clearly influenced by the terroir of the wooded Sintra mountain region and its proximity to the sea. There’s a very limited annual production, and each bottle of this exclusive wine can last for decades.

For the more discerning palates, the Tivoli Palazzo di Seteais recommends accompanying Colares wine with a four-course gourmet dinner or a petiscos tasting menu. With a variety of dishes carefully chosen by the hotel’s culinary team, the menus in the Colares Room ensure that the fruity notes of its wines harmonise perfectly with Portuguese cheeses, Serrano ham, octopus tempura and the freshest seasonal products from the region.

The plush interior of the Colares Room has been carefully chosen to create an intimate space, transmitting and representing the history of the renowned Colares Winery, with the antique furniture, decorative elements and period photographs donated by the Regional de Colares Winery.
